How to Choose a Cutting Board

One week ago, one of my friend came to ask me that their cutting board should be changed. It has been moldy and scumming. She asked me if there is a good cutting board to recommend? Many people would more like to spend a lot of money on knives and pots, but buy a cutting board at a more reduced price and don’t pay much attention on it. The cutting board touches most of the cooking ingredients. Its quality and safety affect the health of you and your family. If your cutting board is moldy, please throw it away! I learned in the nutrition class that if the chopping board is left in a dark and humid place for a long time, mold, especially Aspergillus flavus, will grow. It is recognized by the International Health Organization as a first-degree carcinogen, and its toxicity is 68 times that of arsenic. The solid wood cutting board is the most common, and I also have a solid wood cutting board. It is really super resistant to cutting! ! It is really suitable for cutting meat, cutting bones, and cutting some harder ingredients. Moreover, the solid wood cutting board is tough and thick, and it feels good to use. This is probably why hotel chefs love to use solid wood cutting board, right?

There are many types of solid wood cutting boards, it is not easy to choose. Generally speaking, ginkgo, saponaria, birch, and willow are generally well-recognized, but the prices are messy. Well known brands are more expensive. But the solid wood cutting board is relatively heavy and easy to mold and have wood slag (my piece is old and scum)

Bamboo cutting boards are mostly composed and made of bamboo pieces, which are lighter than solid wood and are more affordable. But the thickness is not enough, it is easy to mold (my piece is moldy)

It is not resistant to cutting, the wood slag can jump off, and hurt the knife. Please take notice of the adhesive that pull the bamboo pieces together as final cutting board. Some companies claim to use healthy adhesives, please let the sellers specify which adhesive they are using. If the adhesive is exacted from natural plant. It is fine to use. But many are using artificial glue. there is urea resin can be transfered out from the glue, urea resin can release formaldehyde which is very harmful to our body.  However, there are also some bamboo cutting board hat is made of a whole bamboo(below picture), which is resistant to cutting and can be used to chop meat. It does not use chemical adhesives and is not easy to crack. It is more environmentally friendly, but the price is a bit higher.

Plastic cutting boards are relatively light, easy to wash, and antibacterial, but they are easily deformed. There are two main materials: polyethylene PE and polypropylene PP. Generally, PP is more heat-resistant and harder than PE, and is more suitable for cutting boards. Please choose a plastic cutting board with uniform color and no irritating odor and impurities. Some poor quality plastic is easy to crack and leave harmful plastic residue such as BPA or PVC. After the harmful plastic enters the human body, it will cause damage to the liver and kidney. Overall bamboo or solid wood are both better option than plastic.

This is the only cutting board that can chop bones except for solid wood (it will leave shallow knife marks, but just wipe it with the free cutting board. Can be wiped off). The cut is smooth and flexible. It doesn’t hurt the knife. You don’t need to take care of it. After cutting the vegetables, wash them and put them on the side. After a while, they will slowly dry up. Of course, what I am most satisfied with is that it does not grow mold or bacteria.

At last please remember once the chopping board becomes moldy, especially after it is contaminated by Aspergillus flavus, it can cause cancer in long-term use. Therefore, chopping board antibacterial ability should be strong. Safety is the most important thing. In short, cutting boards, daily kitchen supplies, still follow the principle of you getting what you pay for. You can choose products with good quality and craftsmanship.
